The Best Gluten Free Banana Bread Ever!

This post is FAR from furniture restoration, but I wanted to share this great recipe with those that are trying to eat gluten free.  I played with this till I got it perfect!  Try it and you won't be sorry!  Great for breakfast or desert! A great low carb alternative!

Made with:
1 cup blanched almond flour
1 cup coconut flour
1 tablespoon gluten free baking powder
1 teaspoon vanilla flavoring

1/2 cup cup almond milk
1/2 cup coconut oil
5 eggs
2 small very ripe bananas
1/2 cup Stevia in the Raw
1/2 cup chopped walnuts

Heat oven to 350•
Grease a 9 x 9 pan with coconut oil.

Mash bananas, whip with five eggs. Add milk,vanilla and Stevia, whip till smooth. (Add additional chopped walnuts after whipping if desired).

Mix the almond flour, coconut flour and baking powder together with a dash of salt.

Add the egg mixture to your flour mixture stirring till all is mixed. Add your melted 1/2 cup of coconut oil into mixture and stir until smooth.

The batter will be a little stiffer than you are you used to- Pat into the pan and sprinkle walnuts on the top.. Place into 350° oven for 35 to 45 minutes. Check at 30 minutes to see how she's doing.

Let cool and cut into squares. Makes a great breakfast bar! Keep the leftovers in the fridge.
